Recipe: YUMMY Honey, Applesauce, and Banana Muffins

Last year, for Easter, I made apple sauce banana bread. Since then, I have made it several times; it’s always so good! Last night, instead of making a loaf of bread, I decided to make muffins. I altered the recipe a bit and only used two bananas, added extra apple sauce to compensate, and substituted a half of cup of honey for the 1 cup of sugar. The muffins came out so yummy and filling.

Ingredients:

2 ripe bananas

3 cups flour

1/2 tsp. cinnamon

1/2 cup honey

1 tsp. baking soda

1 tsp. vanilla

2 eggs, beaten

3/4 cup naturally sweetened apple sauce (I used Target brand)

Directions:

1. Preheat oven to 350 degrees F

2. Spray muffin tins with baking spray (makes about 20 muffins, do not overfill)

3. Mash bananas in a medium bowl with potato masher

4. Combine all dry ingredients (flour, cinnamon, baking soda)

5. Add wet ingredients to the dry ingredients (bananas, vanilla, honey, eggs, and apple sauce)

6. Stir until all of the dry and wet ingredients are combined (do not over stir)

7. Scoop into muffin tins (I used a medium cookie scoop to make them even)

8. Bake for 20-25 minutes until edges are brown  (until toothpick test comes out clean)

9. Remove from muffin tin, cut in half, add butter, and enjoy
