Saint Patrick’s Day is right around the corner, and if you’re like me and do not enjoy corned beef and cabbage, you may enjoy this festive treat. I made these the other day for a lunch party and they turned out great. My friend also made them and put green food coloring in hers. She made a rainbow out of the Lucky Charms marshmallows and placed it on top, prior to cutting, for a cute decoration.
Lucky Charms Bars
7 cups of Lucky Charms
1 bag of mini marshmallows
1/4 cup of butter
1. Melt butter and marshmallows in a large bowl in the microwave until smooth. (I stopped the microwave after 30 seconds and stirred a few times then cooked again for 30 seconds, stirred, etc. until it was completely melted)
2. Pour in cereal and stir until all of the cereal pieces are covered in the butter/marshmallow mixture.
3. Press cereal mixture, evenly, into 9 x 13 pan that has already been lightly sprayed with cooking spray.
4. Let sit and cool before cutting into bars.
